Our beef is priced by the hanging weight. Everything is an average/estimation. The hanging weight is approximately 55% of the live weight. The take-home beef weight is approximately 70% of the hanging weight. 

For an entire steer (or one whole beef), you would have about 1000 lbs of live weight, about 550 lbs hanging weight, and about 385 lbs of meat to take home to your freezer. One-quarter beef would yield 96 lbs of meat to take home and put in your freezer.

Our grass-fed, grain-finished beef begins as bull calves castrated into steers shortly after birth. Staying with the mother until weaning, at about 6-8 months old, they then start on a feed ration, while always having access to fresh grass pasture and water. Our steers stay on a custom starter feed for approximately 90 days and are then switched to a custom finishing feed for approximately 90 more days. This gives them a wonderful, high protein, high energy, high fiber, high fat, high everything diet that leads to immaculate marbling and tender juicy meat. 

We butchered our steers at a live weight of around 1,000 lbs at 12-14 months old. This is much younger than your typical 2-year-old feedlot steer. Coming in lighter than a typical feedlot steer,  we produce a  more tender higher quality marbling of the meat.
